The grapes are harvested and vinified separately: the crushed white grapes, obtained by soft pressing, are immediately separated from the skins, clarified and fermented at a controlled temperature of 17 ° C with the aid of selected yeasts. The vinification of red grapes instead, involves a few hours of skin maceration of the liquid in contact with the skins for the extraction of color and primary aromas. The assembly of the two wines leads to obtaining the basic cuvée.
|Aging:||A second fermentation process starts in the autoclave for the second fermentation, after which the wine is subjected to stabilization and microfiltration before bottling.|
Color: Antique pink, silky. Aroma Intense nose with fruity hints of peach and wild strawberry, yeast and bread crust. Velvety, full and savory. Fine and persistent perlage
Excellent as an aperitif, with fish appetizers, cold cuts, but also with tasty meats, sauces and fatty cheeses.
