FIRST FERMENTATION: the must is fermented at a temperature of 14 ° C for about 30 days. Stop for 5 months on the fine lees with batonnage to obtain the very fine perfumes derived from the lysis of the yeast cells.

PERLAGE: the tiny and constant bubbles that rise in the glass generate fascinating chains that on the surface maintain a stable foam crown typical of a perfect aging on the lees.
COLOR: bright golden with bright reflections
BOUQUET: very intense, complex, with floral and fruity scents, rich in secondary aromas that give particular finesse, such as honey and dried fruit.
FLAVOR: Elegant and sapid. The perfect acid balance brings out a pleasant freshness. The long aging gives unique body and volume. The finish is clean with a fine and persistent aftertaste.

199 years of vintage have made the Alta Langa DOCG Classic Method the highest result of Tosti production. A vintage obtained with 100% of Pinot Noir grapes harvested by hand in boxes in the hilly vineyards in the areas surrounding Canelli at a minimum height of 350 meters above sea level. A small production obtained from 1.82 hectares of vineyards. 2014 was an unpredictable year, full of twists. If a hot spring anticipated the budding by announcing an early vintage, the persistent summer rains and the low insolation of July finally delayed the harvest. The wise management of the vineyard, however, allowed to bring perfectly healthy grapes into the cellar characterized by a pleasant acidity which gives the final product great freshness and elegance, as well as excellent longevity over time.
