NEBULA - MONFERRATO ROSSO DOC Variety:100% Nebbiolo Ground:Clayey silt Exposure and altitude:South - 300 m a.s.l. Harvest:Manual in small boxes....
The Nebbiolo vineyards are placed on the top of our estate, in order to ensure the best sun exposure to the bunches. The grapes are harvested around the second decade of October. Once de-stemmed, a 10% drain is carried out on the must obtained in order to increase the concentration of aromas and phenolic compounds. At the end of the fermentation, the wine carries out the subsequent malolactic fermentation and is placed in French oak barrels of 12 hectoliters for 2 years. Once the refinement is complete, the wine is bottled and rests for 6 months in our underground cellar.
